They are traditionally roasted in an underground earthen pit oven. After cooking, the agaves are crushed using a stone tahona and fermented naturally. The fermented liquid is then double-distilled in copper stills. This expression presents characteristic vegetal and earthy notes balanced by natural cooked-agave sweetness. Despite its high strength, it offers a rich mouthfeel and a surprisingly balanced finish.
