Dixeebe Mexicano Edition No. 1 is a limited-production mezcal made by fifth-generation maestro mezcalero Valentín Cortés in Santiago Matatlán, Oaxaca. It is crafted from cultivated Mexicano agave, scientifically classified as Agave rhodacantha. The agaves used for this expression are matured for approximately 12 years before harvesting. They are traditionally roasted in an underground pit oven and crushed using a stone tahona. Fermentation takes place in pine vats using naturally occurring ambient yeast. The fermented agave is then double-distilled in copper alembic stills. This mezcal presents floral aromas with minimal smoke. The palate combines earthy notes with the natural sweetness of cooked agave. Bottled at 53% ABV, it offers a powerful yet balanced drinking experience with a lingering finish.
