It takes 12.2 kg (nearly 27 lbs) of underripe, ripe, and overripe Williams pears to obtain the full flavor spectrum and produce a single liter of Hans Reisetbauer Williams Pear Eau-de-Vie. August and September harvests from Reisetbauer’s own organic-certified grove of nearly 17,000 Williams pear trees ensure optimal ripeness for fermentation.
