It is produced from 100% estate-grown agave cultivated at Mi Casa’s El Potrero Colorado ranch in Michoacán, Mexico. The agave is cooked under low pressure before extraction through a four-stage roller mill. Fermentation lasts approximately 96 hours in open-top stainless-steel vats using sparkling-wine yeast and no agave fibers. The spirit is twice distilled in stainless-steel pot stills fitted with copper condensers. It is then conditioned for nine months in stainless steel and adjusted to bottling strength with deep-well water. The aroma presents wet stone, fresh cedar, cucumber, cooked agave, and mineral notes. Honeydew, rock candy, biscotti, black pepper, citrus, and agave sweetness shape its powerful palate. Bottled at 108 proof, it delivers a chewy, beeswax-like texture and a pronounced warming finish.
