- Limited-edition cask-aged dry gin produced by The Kyoto Distillery in Kyoto, Japan
- Distilled using rice spirit and locally sourced Japanese botanicals
- 11 botanicals include juniper, yellow yuzu,akamatsu(Japanese red pine), red shiso leaves, bamboo leaves, ginger, lemon, orris root, gyokuro tea from the Uji region, green sanshç peppercorn, andkinome(peppercorn tree leaves)
- Botanicals are divided into six distilling groups based on flavor and aroma: Base, Citrus, Herbal, Spice, Green Tea, and Fruity & Floral
- Each group is distilled separately before blending; the blend is left to marry in stainless steel before bottling
- Aged nearly 1 year in ex-bourbon barrels that previously held Kilchoman Islay Single Malt Scotch
- Proofed with water sourced from the Fushimi region, known for its delicate brewing water
- Bitter orange, petrichor, delicate pine, and savory smoke on the nose transitions to a palate of salted lemon peel and smoked juniper with bright minerality and a delicate green tea bitterness

KI NO BI Edition K is the result of a unique collaboration with independent Islay Scotch whisky distiller Kilchoman. Kyoto Distillery’s KI NO BI Kyoto Dry Gin is aged just shy of a year in ex-bourbon barrels previously used to mature Kilchoman’s peated malt. The result is an incredibly well-integrated, barrel-aged gin that harmoniously marries all the stone fruit and peat smoke of Kilchoman whisky with KI NO BI’s citrus- and spice-driven botanical profile.
